
Lucille's Grilled Pork Ribs with Garlic Mashed Potatoes

Ingredients
10-15 pounds Port Ribs
10 large Yukon Gold Potatoes
2 Tbsp Minced Garlic
.5 cup shredded parmesan cheese
1/2 pint heavy cream
S&P to taste
Lucille's Mustard BBQ Sauce (Recipe on our website)
Directions
Get those ribs out on your smoker for a few hours.
Turn up the heat to 275 and cook until desired doneness.
While those ribs are cooking, throw your diced potatoes into a large pot.
Cover with water and boil until tender.
Strain the potatoes and throw them back in the pot.
Pour in your heavy cream, add the garlic, parmesan cheese and mash them to desired consistency.
Add salt & pepper to taste.
When the ribs are cooked, turn the heat down to 180-200 and baste them with Lucille's Mustard BBQ sauce.
Cook them 10 minutes longer, and remove them from the grill.
Let them rest covered for 10 minutes.
